SUMMER ROSÉ AND GRILLING

When I think of Rosé, both still and sparkling, my chef’s instinct leans toward fish and seafood. Two of my favorites, wild caught salmon and fresh Gulf shrimp, go really well with several Rosé wines.  Here are my picks.

Grilled Salmon + La Crema Rosé of Pinot Noir

I recommend that you buy wild caught, fresh salmon to get the best result. Whether you’re using charcoal or gas, start with a grill on medium heat. Salmon must be monitored closely while cooking, as it’s very delicate. I use just a little salt and pepper. 

Place a non-stick grill mat on the grill (I like the Yoshi brand grill mat.) Place the salmon on the mat with the skin side up. For an average size filet (about 8 oz.), grill seven to eight minutes per side. Remove from the grill to a tray, loosely cover with aluminum foil, and allow to sit for about five minutes before serving.


Grilled Shrimp K-Bobs + Notorious Pink Grenache Rosé

I use fresh Gulf shrimp, 8 – 10 count, peeled and deveined. I want to really jazz up the shrimp flavors, so I’ve prepared some fresh pineapple chunks and cherry tomatoes to complete my skewers. 

When seasoning, salt and pepper or your favorite blackening mix are really all you need. If you don’t like any of those spices, try using Tajin. When used on the pineapple (and other fruit and veggies) it brings out amazing flavors. Sprinkle a little on before or after grilling. I really like a hot grill for shrimp skewers and I usually don’t use a grill mat. Grill your shrimp around six minutes. You will need to adjust according to the size of your shrimp.  I recommend these skewers go directly from the grill to the plate.

Grilled Fish and Seafood + Perrier Jouet Blason Rosé

Liven things up with a little spritz. Coming from Denmark, where we have always enjoyed it, I am so happy that Champagne and Sparkling Wine have finally found their place at the dinner table. These wines are so food perfect, and the bubbly “mousse” adds another level of sophistication and complexity to the pairing. The Perrier Jouet Rosé suggested here is pricey, but you can find a wonderful sparkling wine to fit any budget. Ask me or any of our Celebration Specialists who are always happy to help.

Keep in mind that summer grilling should be a fun group activity. Keep it simple. Don’t use elaborate, ingredient heavy recipes. Buy good ingredients. Season. Grill. Enjoy. Repeat.
